An easy breakfast casserole recipe is something everyone needs to have in their recipe index! This recipe has been thrown around in my extended family for YEARS! We ate it growing up regularly and I make it for my own family now!
I usually pull this recipe out when I have old dry bread that is no good for sandwiches…but isn't moldy yet. Old bread works great in this easy breakfast casserole and I don't have to feel wasteful throwing it alway!
I also love this recipe for using up an abundance of eggs. We are blessed to get farm fresh eggs from my brother and his wife….if they have a LOT of eggs….I will take extras and make meals like this one that call for lots of eggs!
How to Make Easy Breakfast Casserole
You start out by just tearing up your 8-10 slices of bread and putting them into the bottom of a greased 9 x 13 pan. This is definitely something the kids can assist with!
Next you will layer your browned sausage and an egg and milk mixture over your bread.
Last step is to layer shredded cheese on the top! Yummy! You will then cover the pan and put in the fridge overnight or all day if you plan to make this for dinner. You can see the full ingredients and directions below. This easy breakfast casserole is just plain good! It is a hardy protein filled meal.

- 1 pound sausage cooked and drained
- 8-10 slices bread
- 8 eggs beaten
- 2 cups milk
- 1 cup shredded cheese
- 1 teaspoon salt
- 1 teaspoon dried mustard

Brown your ground sausage and drain off any excess grease.

Tear bread into small pieces and layer in the bottom of a greased 9 x 13 baking pan.

Layer sausage on top of bread.

Beat eggs in a bowl. Mix in milk, salt and dried mustard.

Pour the egg mixture over the sausage and bread.

Layer cheese over the top.

Cover and place in refrigerator for 7-8 hours or overnight.

When ready to cook, remove from refrigerator and cover with foil.

Bake at 350 degrees F for 20 minutes. Remove foil and bake for 15 more minutes.
You can use any kind of shredded cheese your family likes.
This is great with salsa on top after baking!
You can spice it up by using hot and spicy sausage!
