Fiesta corn cucumber salad is refreshing and festive for spring cookouts and family events. This is a quick salad to throw together and a great way to use up those garden cucumbers that seem to multiply.

WHAT IS FIESTA CORN?
I use fiesta corn in this recipe. It is fresh-cut canned corn that is seasoned with red and green peppers.
There are similar cans of Southwest corn and Mexicorn that will also work perfectly in this recipe.
These are located in the canned vegetable aisle at most grocery stores. I love the added color and flavor to the recipe versus using plain corn.
WILL KIDS LIKE CORN CUCUMBER SALAD?
I would love to say that all kids will like this vegetable-based salad. Unfortunately, as the parent of one child who is VERY picky, I know that there will be some who don't care for this recipe.
I think this is a kid-friendly salad recipe because most kids like corn. It also includes ranch dressing which is another kid-loved ingredient.
Put some on their plate and cross your fingers. This may become their new favorite veggie side dish.
CAN I ADD SOME SPICE TO THIS SALAD RECIPE?
If you like a little heat in your food, I am right there with you! It is very easy to add some extra spice to this Fiesta corn salad!
One way is to swap out the ranch dressing for a spicy ranch dressing.
If some members of your family don't care for spicy foods, then try adding a dash of cayenne pepper to your bowl only!

This cucumber corn salad recipe only has 4 ingredients plus salt and pepper if desired. I love simple recipes with under 5 ingredients!
- Cucumber
- Fiesta corn
- Shredded carrots
- Ranch dressing
- Salt and Pepper, if desired
HOW TO MAKE FIESTA CORN CUCUMBER SALAD
There is no cooking involved in this easy salad recipe. You can make this up ahead of time and keep it in the refrigerator ready to go when mealtime comes.
STEP ONE: PREPARE VEGETABLES
Start off by peeling the cucumbers and then slicing them into small bite-sized chunks.
I like to cut my shredded carrots down even more into very small pieces. This is definitely optional and you can leave them in full-sized shreds if desired.
Open the fiesta corn and drain it VERY WELL. You don't want that excess liquid making the salad runny.
STEP TWO: COMBINE INGREDIENTS
Combine the vegetables and ranch dressing in a medium bowl. Stir to combine the ingredients.
Add salt and pepper to taste, if desired.
If you have time to refrigerate for 30 minutes or so before eating this will enhance the flavors. If not, it will still be great!
Be sure to cover and refrigerate any leftovers.

A healthy and delicious side dish, this Fiesta Corn Cucumber Salad is great with any main dish!
- 1 can fiesta corn well-drained
- 1 large cucumbers peeled and cut into small pieces
- 1/4 cup shredded carrots diced up even more into tiny pieces
- 1/2 cup ranch dressing or even Fiesta or Spicy Ranch dressing if you prefer
- Salt and Pepper to taste if desired

Drain your can of fiesta corn well. Peel and chop the cucumber. Chop the shredded carrots into very small pieces.

Put the fiesta corn into a bowl. Add your chopped up cucumbers and carrots to the bowl.

Add the ranch dressing, salt and pepper (if desired) and stir all ingredients until veggies are well coated.

Refrigerate the salad in a covered bowl.
Keep leftovers refrigerated.
