Hashbrown casserole is a great comfort food, but if you add a few twists you can make it into a hearty meal! This hearty hashbrown casserole recipe is a meal on its own. It is easy to make and really good too! I saw a recipe over on the blog, Thrifty Jinxy that looked really delicious. I made several changes so that my family would like it and came up with this Hearty Hashbrown Casserole!
By adding in ground beef, vegetables and some seasonings you have a delicious dinner. This is made in a 9×13 baking pan. When I made it recently, it was a night that my husband had to work late. When he got home he was surprised to see only a small corner of the pan was left for him. He looked at me…what could I say…all four kids loved it and he was lucky there was any left!! 🙂
There are some easy areas to modify on this recipe. If you don't like to use ground beef, you could try ground pork, chicken or turkey and I think it would still turn out great. I use green beans, corn and tomatoes in my recipe. You could try out other veggies if your family prefers.
I used frozen hashbrowns that I just put in the fridge all day to thaw. You could buy the thawed hashbrowns in the refrigerated section at the store or even make your own hashbrowns!
I knew when I made this hearty hashbrown casserole that I would like it, but I was surprised by how much the whole family like it! It is definitely going on our regular dinner rotation!

- 1 pound ground beef or ground pork, turkey, chicken
- 2 Tablespoons Onion Powder or 1 small onion chopped
- 2 Tablespoons Flour
- 15 ounces green beans can, drained
- 15 ounces corn can, drained
- 1 can Ro-Tel drained
- 1 cup beef broth
- 2 Tablespoons ketchup
- 3 Tablespoons Worcestershire sauce
- 26 ounce shredded hash browns if frozen you will need to thaw
- 2 cups cheddar cheese shredded
- 1/4 cup butter melted
- Salt and Pepper to Taste

Heat oven to 375 degrees F.

Brown the ground beef with the chopped onion or onion powder and drain any excess grease.

Add in the flour, ketchup, Worcestershire sauce, salt, pepper, green beans, corn, Ro-Tel and broth. Stir well and cook for 5 more minutes.

Place this mixture in the bottom of a 9x13 baking pan that has been sprayed with non-stick cooking spray.

In a big bowl, mix the hash browns, melted butter and one cup of cheese.

Spread the hash brown mixture on top of the meat and veggie layer.

Bake for 45 minutes. Remove from oven and sprinkle remaining cup of cheese on top.

Bake for 5 more minutes or until cheese is melted.
