Loaded Ranch Potatoes are a very easy side dish and a good way to jazz up ordinary red potatoes!
I almost didn't do a post on these Loaded Ranch Potatoes. I personally didn't love them….BUT my family did love them! I am not a big “ranch” eater….I prefer Italian dressings or vinaigrettes. I think that is why this didn't wow me like I thought it would.
My daughter and my husband both thought these were wonderful and said that they thought I should post the recipe! They think I can be a picky eater and said that I need to post things that most normal people would like! 🙂 I am sure there was no insult intended!!
I love that you use small red potatoes…new potatoes would work well also. You just wash them and leave the skins ON. That is a big time saver for me. You don't have to cut them up really small…just bite size chunks.
I threw the potato chunks and the other ingredients into a big bowl and just stirred it all around so that the potatoes were covered well.
I added extra cheese on top…because cheese makes most things better! These Loaded Ranch Potatoes would be great for a big family gathering or a church dinner!

- 2 pounds small red potatoes cut into bite size pieces
- 1/2 cup ranch dressing
- 2 cups shredded cheese divided
- 1/2 cup real bacon bits
- 1 Tablespoon dried parsley

Preheat oven to 350 degrees F.

Wash your potatoes and cut into bite size pieces.

In a large bowl combine potatoes, ranch dressing, 1 cup cheese, parsley and real bacon bits. Stir around until potatoes are evenly covered.

Lightly grease or spray with nonstick cooking spray a 9x13 baking dish.

Spoon potato mixture into baking dish. Cover with foil.

Bake for 40 minutes. Remove foil, sprinkle remaining cup of cheese over the top. Bake an additional 15 minutes or until potatoes are tender.
You can use new potatoes in this dish also. You could substitute dried rosemary in place of parsley. You can use any kind of shredded cheese...mild cheddar, colby jack, sharp cheddar, etc.

Even though I am not a big potato fan, every once in a while you need a comforting potato dish. I’d like to try these with the powdered ranch mix instead. That stuff is miraculous!
