If you haven't used salted caramel in a recipe yet…you need to! These Salted Caramel and Chocolate Chip Pudding Cookies are an easy way to get your foot in the door with salted caramel. It really is a treat to eat!!
I love the ease of using salted caramel chips. I was surprised when I saw these chips in the baking aisle at the grocery store. I instantly threw them in the cart…knowing that I would be whipping up a cookie with these little delights!
I wanted the cookies to be soft and have found that the best way to achieve this goal is to use pudding mix in the cookies. If you are new to this concept…it is a must do! Unless you like a crunchy cookie…then do not use pudding mix, lol!
Ingredients for Salted Caramel and Chocolate Chip Pudding Cookies
2 1/4 cup all-purpose flour
1 tsp baking soda
1 cup butter or margarine softened to room temperature
3/4 cup brown sugar
1/4 cup white sugar
1 3.4 oz package of instant vanilla or cheesecake flavored pudding mix
1 tsp vanilla extract
2 eggs
1 cup chocolate chips
1 cup salted caramel chips
How to Make Salted Caramel and Chocolate Chip Pudding Cookies
In a mixing bowl, cream together your sugars, butter, vanilla extract and pudding mix. Beat these ingredients until creamy. Add in your eggs and beat slightly. Add in your dry ingredients and stir until well combined. Last, fold or gently stir in your chocolate and salted caramel chips. Place by spoonfuls about 2 inches apart on a baking sheet. Bake for 8-10 minutes at 375 degrees F.
This recipe made about 3 dozen cookies for me. I made a medium-sized cookie and baked until they were just starting to brown. I like to leave mine on the cookie sheet for a couple of minutes after removing from the oven and then I will transfer them to a cooling rack.
