In my mind if a cookie isn't soft…it isn't worth eating! I know that there are people who prefer a crunchy cookie…but that isn't me! I will admit that I don't enjoy making cookies because it is so time-consuming! I was in the mood for cookies, but not in the mood to spend a couple of hours in the kitchen. So I compromised with myself and found a great bar cookie recipe! You can go HERE to see the original recipe.
These bars turned out to be delicious and EASY…oh, did I mention they were also QUICK!! Those are 3 very big points for a recipe…quick, easy and delicious!! This recipe can also be easily adapted for what you have on hand…instead of chocolate chips you can use peanut butter, butterscotch, mint, etc. You could even use a combination of chips! Yummy!!
I will probably make this again before Christmas (since these won't last till then) and use the pretty red/green chocolate chips….I love to liven up my cookies with color!!

- 2 cups brown sugar
- 2/3 cup salted butter softened
- 3 eggs whisked
- 2 1/2 cup flour
- 2 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1 1/2 to 2 cups semi-sweet chocolate chips

Pre-heat oven to 325 degrees.

Cream butter and sugar in a large bowl with mixer.

Add in eggs and vanilla and stir until combined.

Slowly add the flour, salt and baking powder into the wet mixture.

Stir until the flour is well combined with the wet mixture.

Fold in the chocolate chips.

Grease a 13x9 pan and lightly dust with flour.

Press dough into pan with flour on your hands.

Bake for 25-35 minutes or until lightly browned. The dough should be soft in the center.

Allow bars to cool and enjoy!
The only time I used the mixer was to cream the butter and sugar. I just stirred all the other ingredients by hand.
Be sure to not overcook....it will cook a little more in the pan once you remove it from the oven.
You can change the chocolate chips for other "chip" varieties if you want!
These are wonderful the next day or longer...you can always stick a bar in the microwave for 10 seconds to warm up!

I love super easy and quick recipes! <3 (Ain't nobody got time to wait eons to eat! :O ) This reminds me of the cookie skillet pies that some restaurants sell (but it's so much cheaper to make your own! :)!
Throw some ice cream on top and it would be a lot like those skillet pies!! Yum!

Surprisingly, I have never made cookie BARS, only actual cookies. These sound awesome, and I would love to use them as a base to make vegan cookie bars!
