WHAT IS RICED CAULIFLOWER?
You may hear riced cauliflower called cauliflower rice but that term isn't exactly correct. These little tiny bits of food are not rice made with some cauliflower. They are 100% cauliflower.
I know that this recipe is called Cheesy Cauliflower Rice, but when the recipe was created it was a very new ingredient and I didn't know any better, LOL!
The cauliflower is just shaved into pieces that resemble the size of rice. The texture is similar to rice, but it isn't the same as eating rice.
I will admit I don't LOVE riced cauliflower, but I do eat it in certain recipes and it has saved me a ton of carb-heavy calories. Eating it plain is not going to happen for me, but in recipes like this Weight Watchers Cheesy Cauliflower Rice, it is very good.
TIPS FOR COOKING WITH RICED CAULIFLOWER
One awesome thing that has transpired in recent years is that it is easier than ever to buy cauliflower already riced.
I love to find ways to save time in the kitchen and ricing the head of cauliflower is not my idea of fun. Now I can buy bags of frozen riced cauliflower and it is very time-saving.
My favorite place to get riced cauliflower is at Sam's Club. They have a big bag with multiple smaller bags inside. It is very inexpensive!
The cauliflower can be very liquidy and some recipes do better if you thaw it out and then squeeze out the excess liquid with paper towels.
Sometimes it needs longer to cook so that the consistency is more like rice.

INGREDIENTS FOR CHEESY CAULIFLOWER RICE
The spices and seasonings really help make this recipe good.
- Riced cauliflower (thawed)
- Light buttery spread
- Minced garlic
- Chicken broth
- Fat-free half & half
- Grated Parmesan cheese
- Light cream cheese
- Onion powder
- Salt
- Black pepper

HOW TO MAKE WW CHEESY CAULIFLOWER RICE
This is an easy skillet side dish. It doesn't require getting a lot of pans dirty and I love that!
STEP ONE: SAUTE GARLIC
Grab your extra big skillet and melt the light buttery spread over medium to high heat.
Now add in the garlic.
Cook and stir for about 2 minutes.
STEP TWO: COOK RICED CAULIFLOWER
Now reduce the heat to medium and stir in riced cauliflower and broth. Cover and cook for 10 minutes, stirring occasionally.
**I like to buy already-made riced cauliflower in the freezer section. You can also make your own. If you use frozen–I just thaw it out in the refrigerator or microwave before this step!
Go ahead and reduce heat to medium-low.
STEP THREE: ADD REMAINING INGREDIENTS
Add in all of the remaining ingredients.
Cook this mixture while stirring until the cheese has melted and the mixture is uniform and most of the liquid has cooked out. It doesn't take long–maybe 2 to 4 minutes.
Serve warm with your favorite main dish.

WW POINTS
One thing that is GREAT about this recipe is that you can eat a large serving for LOW myWW Points.
I divided this out into 4 servings that are approximately a cup each—it is easy when you start with 4 cups of riced cauliflower!
If you want less—just eat a half cup! This recipe is only 2 myWW Points per serving. A cup is a big serving size too!
On the current WeightWatchers Program (2023) it is 2 points per serving. One cup is a serving.
