Soup season is here and this Weight Watchers Potato Soup will fill you up and not out, LOL! This is a fantastic Weight Watchers recipe that you will want to make again and again. It is comfort food without all the extra calories.

POTATO SOUP MODIFICATIONS
Potato soup has been a favorite of mine for a long, long time. I love to make a really simple soup that is basically just potatoes, milk, butter and salt and pepper. That is the kind I grew up eating.
The traditional potato soup I used to make is loaded with lots of potatoes and has a lot of butter in it. It isn't very friendly if you are trying to lose weight!!
Luckily it is easy to make modifications to most recipes to make them more caloric-friendly.
One easy modification for soup recipes is to change from using whole milk or heavy cream to lower-fat milk or even broth. Broth can save a lot of calories!
Using fewer potatoes is another way to save some calories with potato soup. You can always add other veggies to bulk the soup up if you choose. I like carrots in my potato soup!
INGREDIENTS FOR WEIGHT WATCHERS POTATO SOUP
I love kitchen shortcuts, and this WW soup recipe has a great shortcut! Frozen hash browns save me a lot of time peeling and cutting and they cook fast too!
- Frozen Hash Browns
- Fat-Free Chicken Broth
- Fat-Free Evaporated Milk
- Low-Fat Cream Cheese
- Garlic
- Thyme
- Parsley
- Shredded Cheddar Cheese, optional

HOW TO MAKE WW POTATO SOUP
This is an easy one-pot soup recipe. Dinner will be on the table in no time.
STEP ONE: COOK POTATOES
Add the frozen hash browns and chopped garlic in a large sauce pan or pot.
Pour the chicken stock into the pot.
Stir the ingredients together and bring them to a gentle boil over medium-high heat.

STEP TWO: ADD MILK
Lower the heat to medium, and then add in the evaporated milk.
Let this mixture simmer for about 10 minutes.
STEP THREE: ADD CREAM CHEESE
Remove the pan from the heat and add in the cream cheese. Use an immersion blender to puree the soup.
Add in the dried thyme and fresh parsley.
Season with salt and pepper to your own personal taste.
You can garnish with a little bit of shredded cheddar cheese if you desire.

This Weight Watchers Potato Soup is only 4 Freestyle SmartPoints per serving. The serving size is one cup! This does NOT count adding shredded cheese as a garnish! Be sure to count anything extra you add to your soup.

This Weight Watchers Potato Soup recipe is easy to make on the stovetop and is low in points!
- 26 ounces frozen Hash browns
- 32 ounces fat-free, low sodium Chicken Broth
- 12 ounces fat free Evaporated Milk
- 2 ounces Low fat Cream Cheese
- 2 large cloves of Garlic chopped
- 1 teaspoon dried Thyme
- ¼ cups Fresh Parsley
- Salt and Pepper to taste
- 1 teaspoon Shredded Cheddar Cheese optional garnish

In a large sauce pan combine the frozen hash browns and chopped garlic.

Add the chicken stock.

Let it come to a gentle boil over medium high heat.

Lower the heat to medium. Add the evaporated milk and let it simmer for 10 minutes.

Remove the saucepan from heat. Add the cream cheese and using an immersion blender, puree the soup.

Add the dried thyme and fresh parsley and season the soup with salt and pepper.

Serve hot with an optional garnish of a teaspoon of shredded cheddar cheese.
