Soft Chocolate Chip Cookie Bars

An easy, delicious and soft bar cookie that is loaded with yummy chocolate chips!

Ingredients

  • 2 cups brown sugar
  • 2/3 cup salted butter softened
  • 3 eggs whisked
  • 2 1/2 cup flour
  • 2 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1 1/2 to 2 cups semi-sweet chocolate chips

Instructions

  1. Pre-heat oven to 325 degrees.
  2. Cream butter and sugar in a large bowl with mixer.
  3. Add in eggs and vanilla and stir until combined.
  4. Slowly add the flour, salt and baking powder into the wet mixture.
  5. Stir until the flour is well combined with the wet mixture.
  6. Fold in the chocolate chips.
  7. Grease a 13x9 pan and lightly dust with flour.
  8. Press dough into pan with flour on your hands.
  9. Bake for 25-35 minutes or until lightly browned. The dough should be soft in the center.
  10. Allow bars to cool and enjoy!

Recipe Notes

The only time I used the mixer was to cream the butter and sugar. I just stirred all the other ingredients by hand.
Be sure to not overcook....it will cook a little more in the pan once you remove it from the oven.
You can change the chocolate chips for other "chip" varieties if you want!
These are wonderful the next day or longer...you can always stick a bar in the microwave for 10 seconds to warm up!
