Crustless Corn Quiche

A delicious quiche without all the calories of the crust!

  • 6 eggs beaten
  • 1/3 cup heavy cream
  • 1 cup shredded cheese
  • 1 can corn drained
  • 1 can Ro-tel drained
  • 1/2 cup real bacon pieces or chopped cooked bacon
  • 1 Tablespoon parsley fresh or dried
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper


  1. Preheat oven to 400 degrees F.
  2. If you are not using real bacon pieces, you will need to cook your bacon and chop it up first.
  3. In a mixing bowl add all ingredients together and stir well.
  4. Grease or use non-stick spray on 2 deep pie pans.
  5. Pour 1/2 of the mixture into each pie pan.
  6. Bake for 35-50 minutes. Be sure the quiche is cooked all the way through. You can test it by inserting a toothpick into the center. If it comes out clean it should be done.

Recipe Notes

This recipe makes enough for 2 pie pans. You could also use muffin pans, but you will need to adjust the cooking time down significantly for the smaller muffin pans.
