Easy Delicious Cajun Ham and Beans Slow Cooker Recipe

This ham and beans slow cooker recipe will be great for get togethers. Just throw everything in the slow cooker and let it do its magic!

Ingredients

  • 1 20 oz. bag Hurst's Cajun 15 Bean Soup
  • 1 Cajun Seasoning Packet from the bag
  • 2 cups Ham cubed
  • 2 10oz cans Rotel Diced Tomatoes & Green Chilies original or hot
  • 2 32oz cartons Low Sodium Chicken Broth

Instructions

  1. The night before you plan to make this meal you want to soak your beans. Take a medium sized pot or a large bowl, and put the beans in it. Set the Cajun seasoning packet aside. Cover the beans with water allowing for several inches of water to be above the layer of beans, about 6 cups.
  2. The next morning drain all the water off the beans and place the beans in a large slow cooker.
  3. Add the cubed ham, the Cajun seasoning packet and the diced tomatoes with chilies, to the slow cooker.
  4. Add about 8 cups of chicken stock to the slow cooker. You want plenty of liquid, especially if you won't be home to check on the beans during the day. The water should completely cover the ingredients with a couple of extra inches.
  5. Cook this on low for 8 hours or until the beans are soft and ready to eat.
  6. Add a handful or fresh parsley for a fresh flavor, optional.
  7. You can add extra salt and pepper to taste.
  8. This is great served over rice or with cornbread.

Recipe Notes

You can add diced onions and bell peppers to the crock pot for added flavor.
You can do all 8 cups of stock (for maximum flavor) or do half stock and half water.
