Banana Bread Cookies

A soft and flavorful cookie that is a great way to use up ripe bananas!

  • 1 1/2 cups shortening
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 4-5 ripe bananas peeled
  • 1/2 teaspoon salt
  • 2 teaspoon baking soda
  • 4 cups flour

For the Frosting


For the Cookies

  1. Cream together the shortening and the sugar in a large mixing bowl.
  2. Add remaining cookie ingredients to the bowl and mix together.
  3. Drop cookie dough by the tablespoon onto a baking sheet about 2 inches apart.
  4. Bake for 11-13 minutes or until top of cookies is lightly browned.
  5. Place on wire cookie rack to cool for several minutes before frosting.

For the Frosting

  1. In a medium sized pot, bring sugar, evaporated milk and butter to a boil.
  2. Slowly add powdered sugar and stir constantly until the frosting reaches a consistency that you like. You may not need to add all the powdered sugar. You may want to use a wire whisk to stir this mixture to avoid any sugar lumps.
  3. Put frosting onto the tops of the cookies and allow the frosting to set up before eating.

Recipe Notes

This recipe will make about 3-4 dozen cookies that are around 2 inches in diameter.
