Beef Tortellini Soup in the Slow Cooker

Ingredients

  • 1 pound beef stew meat
  • 1 medium onion chopped or 1 Tablespoon onion powder
  • 16 ounces baby carrots
  • 3 teaspoons minced garlic
  • 2 teaspoons sugar
  • 1 can Ro-tel with liquid
  • 2 teaspoons beef base
  • 32 ounces beef broth
  • 15 ounces cut green beans with liquid
  • 16 ounces cheese tortellini fresh or frozen

Instructions

  1. In a 4 quart or larger slow cooker (crock pot) layer the following ingredients in this order: stew meat (does not need to be cooked), onions or onion powder, carrots, garlic, sugar, tomatoes or Ro-tel, beef base and beef broth.
  2. Do not stir or anything. Just cover and cook on low for 7-8 hours.
  3. About 30 minutes prior to serving, add the green beans, undrained, and the tortellini. If you use frozen tortellini then increase heat to high for the last 30 minutes.
  4. Enjoy!

Recipe Notes

I like to use the fresh Buitoni Tortellini in the deli section at most stores. You can also use the frozen tortellini if you prefer. You can use any flavor tortellini you prefer!
You do NOT need to precook the stew meat. It will be falling apart tender and cooked by the end of the day!
If you prefer more liquid in your soup, you can add a cup or two of water and extra 1-2 teaspoon of beef base to add more liquid to your soup.
