An easy side dish that will really jazz up boring potatoes!

Ingredients
2poundssmall red potatoescut into bite size pieces
1/2cupranch dressing
2cupsshredded cheesedivided
1/2cupreal bacon bits
1Tablespoondried parsley
Instructions
Preheat oven to 350 degrees F.
Wash your potatoes and cut into bite size pieces.
In a large bowl combine potatoes, ranch dressing, 1 cup cheese, parsley and real bacon bits. Stir around until potatoes are evenly covered.
Lightly grease or spray with nonstick cooking spray a 9x13 baking dish.
Spoon potato mixture into baking dish. Cover with foil.
Bake for 40 minutes. Remove foil, sprinkle remaining cup of cheese over the top. Bake an additional 15 minutes or until potatoes are tender.
Recipe Notes
You can use new potatoes in this dish also. You could substitute dried rosemary in place of parsley. You can use any kind of shredded cheese...mild cheddar, colby jack, sharp cheddar, etc.
