One Pot Chili Mac

This One Pot Chili Mac is a great twist on chili that is a filling comfort food! Chili Macaroni is a meal that the whole family will love!

Ingredients

  • 1 pound ground beef browned
  • 1 Tablespoon minced garlic
  • 2 Tablespoons onion powder or one small onion finely diced
  • 15 ounce can chili beans with liquid
  • 15 ounce can kidney beans rinsed and drained
  • 1 can Ro-Tel with liquid mild or hot
  • 2 teaspoons chili powder
  • 1 1/2 teaspoons cumin
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 cups chicken broth
  • 16 oz elbow macaroni noodles
  • 1 cup Shredded Cheese or more, as desired

Instructions

  1. Take a large pot and brown your ground beef with the minced garlic and onion powder. Drain any excess fat.
  2. Stir in the chicken broth, beans, Ro-Tel and spices.
  3. Bring to a simmer and then stir in the pasta.
  4. Bring to a boil then cover and reduce the heat and simmer until pasta is fully cooked. This is usually 11-15 minutes. Be careful not to overcook the pasta or it will be mushy!
  5. Remove the pot from the heat.
  6. Garnish with shredded cheese as desired.

Recipe Notes

This is actually great served with tortilla chips! A little sour cream on top isn't bad either!
