Fiesta Corn Cucumber Salad

Ingredients

  • 1 can fiesta corn well-drained
  • 1 large cucumbers peeled and cut into small pieces
  • 1/4 cup shredded carrots diced up even more into tiny pieces
  • 1/2 cup ranch dressing or even Fiesta or Spicy Ranch dressing if you prefer
  • Salt and Pepper to taste if desired

Instructions

  1. Drain your can of fiesta corn well. Peel and chop the cucumber. Chop the shredded carrots into very small pieces.

  2. Put the fiesta corn into a bowl. Add your chopped up cucumbers and carrots to the bowl.
  3. Add the ranch dressing, salt and pepper (if desired) and stir all ingredients until veggies are well coated.

  4. Refrigerate the salad in a covered bowl.

Keep leftovers refrigerated.
