Italian Sausage Wraps

Italian Sausage Wraps are easy, delicious and low carb! These wraps are a great summer recipe and make good use of garden fresh veggies.

Ingredients

  • 1 tablespoon olive oil divided
  • 1 pound Italian sausage links hot or sweet, or a mixture, quartered
  • 1 cup medium-sized red bell pepper, cut into 1-inch squares
  • 1 cup medium-sized green bell pepper, cut into 1-inch squares
  • 1 cup medium onion, cut into thin wedges
  • 1/2 teaspoon Italian seasoning
  • Salt to taste
  • large lettuce leaves Romaine or Iceberg

Instructions

  1. In a large skillet add half a tablespoon of olive oil and sausage and cook and stir until the meat is well browned.
  2. In another bowl, add the peppers and the onions, Italian seasoning, salt and the other half of the olive oil and mix.
  3. Add the mixture to the sausage.
  4. Cook and cover and occasionally stir until sausage is fully cooked and vegetables are tender.
  5. Serve in lettuce cups.
