Ingredients

  • 10 oz  can of Diced Tomatoes & Green Chilies
  • 20 oz  Simply Potatoes Shredded Hash Browns
  • 1 cup  Bisquick Pancake and Baking Mix Heart Smart
  • 1 egg
  • cups  low-fat milk
  • cup  100% liquid egg whites
  • 16 ounces diced ham
  • cup shredded cheese made with 2% milk

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Spray a 9x13 pan with cooking spray.
  3. Spread fresh or thawed hash browns in pan and sprinkle with salt and pepper to your liking.
  4. In a bowl combine ham and the drained can of diced tomatoes and green chilies. Mix this in with the hash browns in pan.
  5. Sprinkle the cheese over this ham, tomato and hash brown mixture.
  6. In the empty bowl combine milk, Bisquick, egg and egg white liquid and whisk together.
  7. Pour this liquid over the top of the hash brown mixture.
  8. Bake, uncovered for 40 minutes or until knife inserted in the center comes out clean.
