Weight Watchers Spicy BLT Cherry Tomatoes and a healthy appetizer idea and very easy to make!

Ingredients

  • 28 cherry tomatoes
  • ½ cup real bacon bits
  • 1/2 cup fat-free mayonnaise
  • ½ to 1 can of diced tomatoes and chilies—drained really well
  • 3 tablespoons grated Parmesan cheese
  • 2 tablespoons minced fresh parsley or dried parsley

Instructions

  1. First wash your tomatoes and then cut a thin slice off the top of each one.
  2. Now scoop out the pulp and toss it.
  3. Turn the tomatoes upside down on a paper towel so any excess liquid can drain out.
  4. While the tomatoes are draining take a small bowl and combine the other ingredients. Stir to combine well.
  5. Spoon the filling into each tomato.
  6. Place the tomatoes in a covered container and refrigerate for at least 2 hours before serving and keep any leftovers in the refrigerator.
