Place 2 cups of heavy whipping cream into the bowl of a stand mixer, and mix it on high until the cream has formed stiff peaks.

Add 2 teaspoons of lemon extract to your whipped cream.

Pour your sweetened condensed milk into the whipped cream mixture, and stir lightly until it is completely combined.

Place half of the ice cream mix into a bowl, and add a few drops of yellow food coloring. Stir the coloring to combine it well with the mixture.

Spread the yellow colored ice cream batter into the bottom of a baking dish.

Repeat steps 4 and 5 with the pink food coloring, layering the pink colored mixture over the yellow in the baking dish.

Take a butter knife and drag it through the ice cream mixture in the baking dish several times. This will help to swirl the colors together slightly.

Add some spring colored sprinkles to the top of your mix.

Place the baking dish in the freezer for at least 4 hours. When it has set, you can scoop it out just as you would traditional ice cream, and serve it with more sprinkles in a cup or cone.
