Grab a saucepan and add a cup of pineapple juice.

Now pour the water, ketchup and apple cider vinegar into the pan and stir to combine.

Now get ready to wisk in the cornstarch, soy sauce and brown sugar. Make sure it is well combined and SMOOTH.

Put this mixture on the stove on medium heat. Allow the sauce to thicken but make sure to stir it often so it doesn't burn on the bottom.

When the sauce is thickened remove the pan from the stove and let it cool down.

While the sauce is cooking or cooling you can cut the chicken thighs into chunks. It works best to have chunks that are 2-3 inches in size.

Go ahead and chop the onion and bell pepper into slices that will fit nicely on a skewer without falling right off.

Start layering the onion, bell pepper, chicken and pineapple chunks on to the skewers.

Grill the skewers over medium heat until the chicken is done in the center.

Use a baster to brush the Polynesian sauce on both sides of the skewers.

Continue grilling with the sauce on, turning the skewers so that all the sides are evenly done.
