Weight Watchers Three Bean Salad with Basil

This Weight Watchers Three Bean Salad with Basil is a great side dish full of veggies and a yummy simple dressing.

Ingredients

  • 1 large tomatoes diced
  • 1 cucumber diced
  • 1/2 red onion diced
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 15 ounces Chick Peas can rinsed and drained
  • 15 ounces Kidney Beans can rinsed and drained
  • 15 ounces Black Beans can rinsed and drained

Dressing:

  • 4 tbsp olive oil extra virgin
  • 1 lime juiced and zested
  • pinch salt and pepper
  • 1/4 cup basil chopped

Instructions

  1. Chop all the vegetables into small diced pieces and place into a large bowl.

  2. Chop the basil into small pieces and place in a small bowl.

  3. Combine the olive oil, lime juice and zest, salt and pepper into the small bowl with the chopped basil. Stir to combine dressing ingredients.

  4. Pour the olive oil dressing onto the salad ingredients and mix until combined
  5. Store in refrigerator.

Recipe Notes

This makes approximately 4 cups. Serving size is 1/2 cup for 2 Freestyle SmartPoints for Weight Watchers.
