Peanut Butter Chocolate Chip Bread

Ingredients

  • 3 eggs large
  • 1/2 cup creamy peanut butter
  • 2 cups sour cream
  • 1 cup sugar
  • 3 cups self-rising flour
  • 2 cups semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350° F.

  2. Grease the bottom and 1/2 way up the sides of the mini loaf pans and set aside.

  3. Cream the eggs, sour cream and sugar together in a mixing bowl.  After this mixture is smooth, add in the peanut butter and continue mixing until completely combined.

  4. Slowly the flour a little bit at a time. Continue mixing the ingredients while you are adding the flour.

  5. Fold the chocolate chips into the batter. 

  6. Pour batter into each mini loaf pan filling it about 3/4 of the way full.

  7. Place the loaf pans in the oven and bake for about 25-35 minutes or until the bread is done in the center and is starting to brown on top. You can check to see if the center is done with a toothpick.

Recipe Notes

This recipe made 5 mini loaves for me. I used mini loaf containers that measured 5 3/4 inches x 3 1/4 inches x 2 inches. 

Allow the bread to cool before wrapping in plastic wrap. 

Store in an airtight container or wrap in plastic wrap or foil to keep the bread moist.
