Weight Watchers Meatloaf

This Weight Watchers Meatloaf recipe is very family-friendly. It will become a favorite WW recipe.

Ingredients

  • 1 lb. 99% lean ground turkey
  • 1/4 cup finely diced carrots 1 small carrot
  • 1/4 cup finely diced celery 2 stalks
  • 2 tablespoons finely diced onion
  • 2 cloves garlic minced
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1 large egg
  • 1/4 cup whole wheat breadcrumbs
  • 5 tablespoons sugar-free ketchup divided
  • Salt and pepper to taste
  • Nonstick Cooking Spray

Instructions

  1. Preheat the oven to 350F
  2. Dice the carrot, onion, celery and garlic very finely. 

  3. Heat a small saute pan over medium heat and lightly spray with cooking spray.
  4. Add the carrots, celery, onion and garlic, along with pinch of salt and pepper, and let it saute for 4 to 5 minutes till the veggies are soft. .
  5. Set aside to cool.

  6. In a large bowl, combine the ground turkey, basil and oregano, the cooled veggie mix, breadcrumbs, 2 tablespoons of ketchup, egg and a salt and pepper.
  7. Mix well to incorporate everything. Mix by hand or with a stand mixer using the dough hook attachment.

  8. Line a baking dish with foil or parchment paper.
  9. Dump the turkey mix in the middle of the baking sheet and use wet hands to shape it into a loaf.
  10. Slather the loaf with the remaining 3 tablespoons of ketchup.
  11. Bake for 60 minutes.Let it rest for 10 minutes, before slicing and serving.
  12. Refrigerate the leftovers.

Recipe Notes

This recipe is ZERO points per serving for the blue and purple myWW Plans. The green plan is 2 points per slice.
