These Air Fryer Breaded Bell Pepper Strips are a delicious snack or side dish and much healthier than traditional fried peppers!

Ingredients

  • Olive oil for spritzing
  • 2/3 cup whole wheat panko breadcrumbs
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg beaten
  • ½ tablespoon water
  • 2 large bell peppers red, orange or yellow bell peppers, seeded and cut into ½ inch thick slices

Instructions

  1. Spritz air fryer basket lightly with oil.
  2. Combine whole wheat panko breadcrumbs, paprika, garlic powder, pepper and salt into a medium shallow bowl.
  3. Combine the beaten egg and water in a small shallow bowl to make an egg wash.
  4. Dip the bell pepper slices in the egg wash to coat.
  5. Dredge the coated bell pepper slices in the seasoned panko breadcrumbs to lightly coat.
  6. Place the panko coated bell pepper slices in a single layer in the air fryer basket.
  7. Lightly spray the bell pepper strips with oil.
  8. Air fry at 400°F for 4-7 minutes or until the panko crumbs are lightly browned.
  9. Carefully remove from air fryer basket to ensure the panko coating does not come off the bell pepper strips. Serve immediately.

Divide this into 4 equal portions.

Each serving is 2 points on all 3 myWW plans...Purple, Blue and Green. This is based on ALL the breadcrumbs being used....and that probably won't be the case.
