Ingredients

  • 15 ounces black beans canned, drained and rinsed
  • 15 ounces corn canned, drained and rinsed
  • 1 cup salsa mild or hot
  • 4 oz. reduced fat cream cheese
  • ½ cup reduced fat cheddar cheese
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • salt and pepper to taste

Instructions

  1. Preheat the oven to 350F and spray a 1 quart baking dish with nonstick spray.
  2. In a large bowl add the cream cheese and beat it till it is smooth and creamy.
  3. Add the back beans, corn, salsa, cheddar cheese, ground cumin, smoked paprika and salt and pepper. Mix it well.
  4. Pour the mixture into the prepared baking dish and smoothen the top.
  5. Bake for 20 minutes or till the cheese is bubbling.
  6. Serve hot with tortilla chips or fresh veggies.
