  1. Cut zucchini into ½-inch thick sticks, pat dry with a paper towel.
  2. Place the flour in a shallow plate.
  3. In another bowl, crack the eggs and whisk it well with a teaspoon of water.
  4. Finally, in a shallow bowl, combine the panko, garlic powder, Italian seasonings and a teaspoon of salt and pepper and mix well.
  5. Preheat air fryer to 370°F if your brand requires preheating.

  6. Dredge each zucchini stick into the flour first, then dip in egg mixture and last coat with panko crumbs.
  7. Spray air fryer basket with olive oil spray. Place coated zucchini sticks in basket in a single layer.
  8. Spray tops of zucchini sticks lightly with olive oil spray.
  9. Air fry at 370°F for 5 minutes.

  10. Flip, spay again lightly with olive oil spray and air fry again at 370F for another 5 minutes.
  11. Serve immediately with ranch or your favorite dipping sauce.

Since zucchini have a large water content, it is essential to dredge the zucchini sticks in the flour first, for the eggs to stick.

WW Points: Divide the fries into 4 equal portions. Each portion is a serving. Green plan is 6 points per serving, Blue & Purple plans have 5 points per serving. 

On the current Weight Watchers Program (2023), it is 5 points per serving.
