This simple homemade Weight Watchers Enchilada Sauce is only 5 ingredients and very low in points!

  1. Heat a saucepan over medium heat and add oil.
  2. Once the oil is hot, add the taco seasoning and toast the taco seasoning for 30 to 45 seconds on low flame. Make sure not to burn it.
  3. Add the tomato sauce to the pan.
  4. In a small bowl add the cornstarch and the chicken stock and stir until the cornstarch dissolves.

  5. Add the chicken stock to the saucepan and stir everything together.
  6. Increase the heat to medium high and simmer for 2 to 3 minutes or till the sauce thickens to your desired consistency.

  7. Let the sauce cool to room temperature, before storing in a clean glass jar, in the fridge, for up to a week.
