Weight Watchers Baked Breakfast Taquitos

Ingredients

  • 10 6-inch corn tortillas
  • 3 large eggs scrambled
  • 1 medium red bell pepper finely chopped
  • 1/2 cup fresh spinach chopped
  • 1 green onion sliced thin
  • 1-2 Tbsp jalapeno minced, optional
  • nonstick cooking spray

Instructions

  1. Preheat the oven to 425°F. Spray a baking dish with nonstick cooking spray and set aside.

  2. In a medium skillet, scramble the 2 eggs.

  3. Add the bell pepper, spinach, green onion and jalapeno to the skillet of scrambled eggs and stir to combine.

  4. Microwave the corn tortillas for 30 seconds to 1 minute to soften the tortillas.

  5. Spoon about 1 tablespoon of egg mixture onto the bottom edge of a warm corn tortilla. Wrap the tortilla tightly upward arond the filling.

  6. Place seam side down on the prepared baking dish. Repeat with remaining tortillas.

  7. Spray the tops lightly with nonstick cooking spray for a crisper taste. Bake the taquitos for about 12-15 minutes or until lightly brown and crisp.

Serving size is 1 taquito.
