These mini bell pepper taco boats are perfect for a meal or party appetizer.
Preheat oven to 350°F.
Brown the ground turkey in a skillet over medium-high heat.
While the meat is browning, prepare the bell peppers. Slice each pepper in half lengthwise. Remove the ribs and rinse out any seeds.
When the meat is done browning, add the taco seasoning to the skillet with 1/4 cup of water. Stir to combine, allow to simmer for 5 minutes.
Bake the taco boats for 15 to 20 minutes or until peppers have softened. Remove baking sheet from oven, and sprinkle cheese evenly over peppers. Bake for 5 more minutes or until cheese is melted.
Remove from oven and top with salsa, sour cream, jalapenos or any other toppings you desire.
