Italian Roasted Potatoes

Italian Roasted Potatoes are a delicious, easy and versatile side dish! This will go great with almost any main course!

Ingredients

  • 3 lbs. Potato scrubbed cleaned and cut into bit sized pieces.
  • 1 pack Dry Zesty Italian Dressing Seasoning Mix
  • 4 tablespoons Extra Virgin Olive Oil
  • Shredded Parmesan Cheese optional garnish
  • Chopped Fresh Parsley optional garnish

Instructions

  1. Scrub clean the potatoes and cut into bite sized pieces. I used a combination of petite red and gold potatoes, that I just cut into half. But if you use large potatoes, cut them into quarters or one-eights, depending on their size. You can use red, gold or even russet potatoes.
  2. Place potatoes in a large bowl or plastic zippered bag and add the olive oil and the Italian seasoning mix.
  3. Mix the oil, seasoning and potatoes together, making sure all the potatoes are covered evenly in oil and seasonings.
  4. Preheat the oven to 450F and line a large baking sheet with foil and spray generously.
  5. Arrange the potatoes in a single layer.
  6. Bake at 450F for 30 minutes, turning the potatoes every 10 minutes.
  7. Add shredded parmesan cheese and fresh parsley and toss.
  8. Serve immediately.

Recipe Notes

Tips: remember you can use any type of potato you may have on hand. You can make clean up easier by lining your pan with non-stick foil!
