The above ingredient amounts make enough spice mix to cover a 6-7 pound whole chicken.

When I make this spice mix I make 8 times the amount listed above. This will yield around 2 cups of spice mixture. That way I won't have to make it up but every few months! If you don't have white pepper, just use more black pepper!
