Crock Pot Ham & Potato Chowder

A creamy, delicious chowder that is the perfect way to use up your leftover ham!

Ingredients

  • 6-8 medium russet potatoes
  • 1-2 cups diced ham
  • 12 oz bag frozen corn
  • 32 oz carton chicken broth
  • 1 cup shredded carrots
  • 2 cups shredded cheese cheddar or any variety you prefer
  • 1/2 teaspoon pepper
  • 1 teaspoon minced garlic
  • 1/2 cup minced onions or onion powder
  • 2 cups heavy cream
  • 1/4 cup butter

Instructions

  1. Peel and dice potatoes and put them into the crock pot.
  2. Add frozen corn, ham and carrots to the crock pot.
  3. Add onion, pepper, garlic and broth to the crock pot.
  4. Cook this mixture for 6-7 hours on low or 4-5 hours on high.
  5. During the last hour of cooking, add the heavy cream, butter and cheese. Stir well and finish cooking at least 30 minutes to an hour. Stir occasionally during this last cooking phase.
  6. You will want to salt this to your taste. Depending on how salty the ham is I chose to not add salt until the soup was done and I could taste it!
  7. You can garnish with more shredded cheese if you like or even some crumbled bacon!

Recipe Notes

This can be a versatile chowder...you can add more or less ham...more or less carrots, etc. Just make it to your family's tastes!
You will want to use a larger crock pot..probably around a 7 quart.
