Crustless Corn Quiche

Crustless Corn Quiche is a delicious lower carb quiche without all the calories of the crust!

Ingredients

  • 6 large eggs beaten
  • 1/3 cup heavy cream
  • 1 cup shredded cheese any variety
  • 15 ounces corn well-drained
  • 1 can Ro-tel well-drained
  • 1/2 cup real bacon pieces or chopped cooked bacon
  • 1 Tablespoon parsley fresh or dried
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • nonstick cooking spray

Instructions

  1. Preheat oven to 400 degrees F.
  2. If you are not using real bacon pieces, you will need to cook your bacon and chop it up first.
  3. In a mixing bowl add all ingredients together and stir well.
  4. Grease or use non-stick spray on 2 deep pie pans.
  5. Pour 1/2 of the mixture into each pie pan.
  6. Bake for 35-50 minutes. Be sure the quiche is cooked all the way through. You can test it by inserting a toothpick into the center. If it comes out clean it should be done.
  7. Remove from oven and let sit for 10 to 20 minutes before slicing.

  8. Refrigerate any leftovers.

Recipe Notes

This recipe makes enough for 2 pie pans. If you only want to make 1 quiche, just divide the ingredients in half. 

This makes 2 quiches. Cut each quiche into 6 equal slices. There are 12 slices total...so 12 servings. 

The WW points for this crustless quiche are: Blue and Purple Plans are 2 points per slice. Green plan is 4 points per slice.
