Roasted Sausage and Vegetables

Roasted sausage and veggies is a quick and easy meal that is all made in one pan!

Ingredients

  • 1 package Smoked Sausage of your choice
  • 16 oz baby carrots
  • 4 medium russet potatoes cleaned and cut up into bite size pieces
  • 2 medium bell peppers cleaned and sliced
  • 4 Tablespoons Olive oil
  • 1 teaspoon minced garlic
  • Salt and Pepper to taste

Instructions

  1. Preheat oven to 400 degrees F.
  2. Clean and cut up all your vegetables into bite size pieces.

  3. Place all veggies into gallon size Ziploc bag. Add oil, salt, pepper and garlic to bag.

  4. Close bag and shake bag and move it around until all veggies are coated with oil and spices to your liking.

  5. On a large jelly roll pan covered in foil, dump out all veggies into a single layer.

  6. Bake vegetables for about 20-25 minutes. Take veggies out of the oven, add sausage to the pan and stir the vegetables and sausage around, leaving them in an even layer.

  7. Return pan to the oven and bake for another 20-30 minutes depending on how you like your vegetables cooked. When the vegetables are cooked to your satisfaction, take out of oven and enjoy!

Recipe Notes

You can use almost any vegetable that you like in this dish. Cauliflower, broccoli, zucchini, etc. all will work great! Just remember that some vegetables take longer to cook. If you use broccoli, you may want to wait and add it when you add the sausage so that it doesn't get burnt.
You can use any oil that you prefer. I usually add about a Tablespoon of oil per pound of veggies. You want them to have a nice coat of oil so that they roast well and get that nice crispy roasted taste!
You can also add whatever spices you like to this dish! It is very easy to customize for your preferences!
