Hearty Hash Brown Casserole

A twist on traditional hash brown casserole that adds meat and veggies and makes it a full meal!

  • 1 pound ground beef or ground pork, turkey, chicken
  • 2 Tablespoons Onion Powder or 1 small onion chopped
  • 2 Tablespoons Flour
  • 1 can green beans drained
  • 1 can corn drained
  • 1 can Ro-Tel drained
  • 1 cup beef broth
  • 2 Tablespoons ketchup
  • 3 Tablespoons Worcestershire sauce
  • Salt and Pepper to Taste
  • 1 bag shredded hash browns 20-26 oz fresh or frozen if frozen you will need to thaw
  • 2 cups shredded cheddar cheese
  • 1/4 cup melted butter


  1. Heat oven to 375 degrees F.
  2. Brown the ground beef with the chopped onion or onion powder and drain any excess grease.
  3. Add in the flour, ketchup, Worcestershire sauce, salt, pepper, green beans, corn, Ro-Tel and broth. Stir well and cook for 5 more minutes.
  4. Place this mixture in the bottom of a 9x13 baking pan that has been sprayed with non-stick cooking spray.
  5. In a big bowl, mix the hash browns, melted butter and one cup of cheese.
  6. Spread the hash brown mixture on top of the meat and veggie layer.
  7. Bake for 45 minutes. Remove from oven and sprinkle remaining cup of cheese on top.
  8. Bake for 5 more minutes or until cheese is melted.
  9. Enjoy!
