Slow Cooker Potato Corn Chowder

A hearty and delicious soup in the slow cooker. This recipe uses frozen hash browns so it is really quick to make!

Ingredients

  • 32 ounces hash browns frozen cubed
  • 3 teaspoons minced garlic
  • 1/2 Tablespoon onion powder
  • 16 ounce frozen corn bag
  • 1 teaspoon seasoned salt
  • 4 Tablespoons real bacon bits
  • 32 ounce chicken broth
  • 2 cups half and half
  • 2 cups mild cheddar cheese shredded

Instructions

  1. Place all ingredients EXCEPT the 1/2 and 1/2 into the slow cooker.
  2. Cook on low for 8-10 hours or on high for 4-5 hours.
  3. During the last 15-30 minutes of cooking you can add the half and half and stir all ingredients together.

  4. This is great served with homemade bread, rolls or even corn bread.

I like to double this recipe so I have plenty for leftovers!
