Ingredients

  • 2 cups Chicken Broth
  • 2 cans Black Beans drained and rinsed
  • 1 pound cooked skinless boneless chicken breast diced into small pieces
  • 38 ounces mild enchilada sauce 2 19 oz cans
  • 2 cans diced tomatoes and green chilies undrained

Instructions

  1. First off drain and rinse the black beans.
  2. Add all the ingredients to a big pot.
  3. Cook on medium-high heat until heated through. I cooked mine for about 30 minutes.

Recipe Notes

I used the bags of refrigerated chicken that is already cooked and sliced up thin for my soup. You can also cook your chicken and slice it up yourself.
