Ingredients

  • 4 cups fat-free chicken broth
  • 4 cans Organic Italian seasoned diced tomatoes
  • 2 cups cooked whole wheat pasta
  • 12 oz cooked chicken breast cubed
  • 2-4 teaspoons dried Italian seasoning
  • Chopped scallions if desired

Instructions

  1. If you don't already have some chicken breasts cooked and cubed then you will want to do that first.
  2. Next up you will cook your pasta according to the package instructions.
  3. While the pasta is cooking I like to go ahead and add the chicken, tomatoes and Italian seasoning to a pot and get it cooking on medium. This gives the herbs a chance to really infuse the soup with flavor!  I let it cook for about 10 minutes while the pasta is cooking.
  4. When the pasta is done cooking, drain it and add it to the pot of soup!  BOOM---DONE!
  5. If you like scallions you can add some to your bowl of soup!

Recipe Notes

Be sure to check points on the tomatoes...some brands do have points!! I found that the organic brands tended to be zero points.

This is ZERO points for the purple plan, 3 points for the Blue plan, and 5 points for the Green plan.

The serving size is one cup.

On the current Weight Watchers Program (2023), it is 2 points per serving.
