Ingredients

  • 2 chicken breasts boneless skinless
  • ½ cup sugar free BBQ Sauce
  • ½ cup water
  • 1 tbsp dehydrated onion flake
  • 1 clove minced garlic
  • 1 box zucchini spirals
  • 15 oz black beans can
  • 1 cup frozen corn thawed
  • 2 oz pepper jack cheese
  • 2 scallions

Instructions

  1. Place the chicken breasts in the Instant Pot liner.
  2. Mix the bbq sauce, water, onion flakes and minced garlic in a bowl and pour over the chicken.
  3. Lock lid, set vent to sealing, and press manual high pressure for 8 minutes.
  4. Cook zucchini spirals in a skillet with salt and pepper for about 7-8 minutes.
  5. When Instant Pot beeps, let the pressure release naturally for 10 minutes.
  6. Remove chicken, and slice.
  7. Place zucchini spirals, black beans, corn, and chicken on a plate or in a bowl.
  8. Sprinkle with pepper jack cheese and scallions.
