Ingredients

  • 2 boneless, skinless chicken breasts boneless skinless
  • ½ cup sugar free BBQ Sauce
  • ½ cup water
  • 1 tbsp dehydrated onion flake
  • 1 large garlic clove minced
  • 12 oz Green Giant frozen zucchini spirals
  • 15 oz black beans can
  • 1 cup frozen corn thawed
  • 2 oz reduced fat shredded pepper jack cheese
  • 2 scallions

Instructions

  1. Place the chicken breasts in the Instant Pot liner.
  2. Mix the bbq sauce, water, onion flakes and minced garlic in a bowl and pour over the chicken.
  3. Lock lid, set vent to sealing, and press manual high pressure for 8 minutes.
  4. Cook zucchini spirals according to package directions.

  5. When Instant Pot beeps, let the pressure release naturally for 10 minutes.
  6. Remove chicken, and slice.
  7. Place zucchini spirals, black beans, corn, and chicken on a plate or in a bowl.
  8. Sprinkle with pepper jack cheese and scallions.

Recipe Notes

Makes 4 bowls and is perfect for meal planning for the week.

On the current Weight Watchers Program (2023), it is 1 point per serving. Divide the chicken evenly between 4 bowls. Then divide the beans, zucchini and corn between the four bowls. One bowl is a serving.
