  • 4 cups riced cauliflower
  • ¼ cup green onions thinly sliced
  • 1 egg
  • ½ cup frozen peas
  • ¼ cup carrots shredded
  • ½ teaspoon ground ginger
  • ½ teaspoon garlic powder
  • 2 tablespoons low sodium soy sauce


  1. Spray a wok or skillet with non-stick cooking spray.
  2. Add in green onions, peas and carrots and saute over medium heat until just tender.
  3. Add in the seasonings and egg. Scramble the egg, mixing it into the vegetable mixture.
  4. Add in cauliflower rice and continue cooking over medium heat, cooking and stirring rice for about 5 minutes until well incorporated. I like to cook mine longer because I want the riced cauliflower to be pretty soft...but this is my personal preference...cook it how you like it!
  5. Add in soy sauce and stir to combine.
  6. Serve and enjoy!
