Ingredients

  • 1 ½ cups dried black beans
  • 1 medium onion diced
  • 4 cloves garlic minced
  • 1 can Rotel
  • 1 ¾ cup low sodium fat-free vegetable broth
  • Juice of 1 lime
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • ¾ tsp sea salt
  • ½ tsp chili powder
  • Fat free shredded cheddar for garnish

Instructions

  1. Rinse your black beans and put in the Instant Pot liner.
  2. Add onion, garlic, rotel, lime juice, cumin, smoked paprika, salt, chili powder, and broth.
  3. Lock lid and set vent to sealing.
  4. Press bean button and cook for 30 minutes on high pressure.
  5. When Instant Pot beeps, let the pressure naturally release for 10 minutes followed by a quick pressure release.
  6. Use an immersion blender to blend the ingredients until smooth.
  7. Serve with your favorite toppings and chips.

This makes approximately 6 cups of dip. Each serving is 1/4 cup.

If you want to make this spicier, you can use HOT Rotel.
