  • 6 oz can of tiny shrimps drained
  • ¼ cup chopped red bell pepper
  • ¼ cup chopped green bell pepper
  • 2 cloves garlic minced
  • 3 large eggs
  • Salt and pepper to taste
  • ¼ cup fat free ricotta cheese
  • 1 teaspoon chopped parsley to garnish
  • Nonstick Olive Oil spray

Instructions

  1. Heat an 8 inch cast iron or nonstick pan, over medium high heat. Spray it lightly with oil spray and sauté both the peppers and garlic until soft.
  2. Add the drained shrimp and salt and pepper and cook for another minute.
  3. Crack the 3 eggs in a bowl and lightly season with salt and pepper. Whisk it well and add it to the shrimp and pepper mix, spreading it evenly.
  4. Add tiny dots of ricotta cheese, about 1 teaspoon per dot, on top of the eggs.
  5. Lower the heat to low and cover the pan and let it cook for10 minutes or till the eggs have set ton top.
  6. Let it cool for couple of minutes and then run a spatula around the pan to loosen it. Cut into 4 wedges and serve immediately with a sprinkle of fresh parsley and dash of hot sauce.
