These Weight Watchers Cajun Shrimp Cups are delicious as an appetizer or main dish and are only 1 Freestyle SmartPoint each!
Using a mini muffin pan, press the eggroll wrappers down into the cups. Make sure they go to the bottom of the pan and then push back the corners to form a little cup.
Lightly spray the wrappers with nonstick olive oil cooking spray before baking.
Zest a whole lime and divide equally. Set one half aside for later.
Mix the Cajun seasoning, shrimp and 1/2 the lime zest in a small mixing bowl. Once well coated lay out on a baking sheet and bake for 8-10 minutes until shrimp are cooked through.
Squeeze the zested lime to get the 1 tsp of lime juice.
