Ingredients

  • 2 boneless skinless chicken breasts cut into 2 inch pieces
  • 1 large zucchini halved through the length and cut into 1 inch slices
  • 1 red onion cut into 1 inch pieces
  • ½ pint grape tomatoes
  • 1 clove garlic minced
  • 2 tablespoons red wine vinegar
  • 1 lemon juiced
  • 1 teaspoon dried oregano
  • ¼ cup plus 1 tablespoon olive oil divided
  • Salt to taste
  • Black pepper to taste
  • Olive Oil Spray

Instructions

  1. In a bowl or mason jar, mix together garlic, red wine vinegar, lemon juice, oregano, and ¼ cup olive oil. Whisk (or shake) until blended. Pour over chicken. Toss to coat. Marinate on the counter for 15 minutes or in the refrigerator for 2 hours to overnight.

  2. When ready to cook, prep vegetables and toss in 1 tablespoon olive oil. Sprinkle with salt and pepper.
  3. Arrange cubed chicken breast, zucchini, onion, and grape tomatoes on skewers. If using wooden skewers be sure to soak them for 30 minutes in water first.

  4. Spray the air fryer basket lightly with olive oil spray.

  5. Place kebabs in air fryer at 380 degrees for 15 to 18 minutes, carefully flipping halfway. Check chicken for doneness and serve warm.

Recipe Notes

I like to use 6 inch metal skewers for the air fryer.

There are 4 points per serving on the Blue and Purple myWW plans. There are 7 points on the Green myWW plan.

On the current WeightWatchers Program (2023) it is 4 points per serving. Remember most of these points are coming from the marinade...most of which isn't consumed. So the real points would be lower.
