Air Fryer Cajun Zucchini Chips

These Air Fryer Cajun Zucchini Chips are a healthy snack idea and a great way to use up all those garden zucchinis.

Ingredients

  • 1 large zucchini 1 1/4 cup sliced, unpeeled
  • 1 teaspoon Cajun seasoning
  • 10 sprays extra virgin olive oil

Instructions

  1. Slice the zucchini with the peel on. You don't want the slices too thick or too thin. Try to slice them 1/8 inch. Using a mandoline slicer helps.

  2. Place the slices in a bowl and coat the zucchini slices in olive oil. I like to use an olive oil spray (non-areosol). This allows the Cajun seasoning to stick, but doesn't add a lot of oil and calories.

  3. Now add the Cajun seasoning to the bowl and stir until the slices are well coated in seasoning.
  4. Spray the basket of the Air Fryer with olive oil spray and then put the slices in a single layer in the basket.

  5. Air fry at 370 F for 8 minutes and then flip them over and cook for another 7-8 minutes. You can spritze the slices with more olive oil when you flip them over for extra crunch, if desired.
