These Air Fryer Cajun Zucchini Chips are a healthy snack idea and a great way to use up all those garden zucchinis.
Slice the zucchini with the peel on. You don't want the slices too thick or too thin. Try to slice them 1/8 inch. Using a mandoline slicer helps.
Place the slices in a bowl and coat the zucchini slices in olive oil. I like to use an olive oil spray (non-areosol). This allows the Cajun seasoning to stick, but doesn't add a lot of oil and calories.
Spray the basket of the Air Fryer with olive oil spray and then put the slices in a single layer in the basket.
Air fry at 370 F for 8 minutes and then flip them over and cook for another 7-8 minutes. You can spritze the slices with more olive oil when you flip them over for extra crunch, if desired.
