  1. The first step is to drain and rinse the black beans. Then lay the beans on a paper towel and dry them off well.
  2. In a medium saute pan that has been sprayed with nonstick cooking spray, add the diced carrots and season them with salt and black pepper.
  3. Cook over medium heat stirring often until carrots begin to soften. When carrots are starting to soften add in the chopped mushrooms and continue cooking until the veggies are soft, but not mushy.
  4. Preheat the oven to 350°F. Prepare a baking sheet by placing a sheet of parchment paper on it.
  5. In a large mixing bowl add the black beans and mash them with a fork. How much you mash them depends on how you like your burgers. If you like them to be chunky then only mash the beans a little bit. If you do not care for chunks in your burgers then mash the beans up a lot.
  6. Add in the egg, onion powder, salt, minced garlic, sauteed veggies, and tomato paste. Stir this all together so it is well-combined.
  7. Now add in the breadcrumbs so the mixture can be formed into patties.
  8. Use 1/2 cup of the burger mixture to create one patty. This recipe should make 5 patties.
  9. Place the veggie burgers onto the baking sheet with parchment paper.
  10. Place the baking sheet in the oven and bake for 10 minutes. Then flip the burgers over and bake for another 10 minutes.

Recipe Notes

1/2 cup of the burger mixture will be used to make 1 patty.
