This healthier skinny chicken salad is guilt-free and perfect for a quick lunch or dinner.

  • lb. cooked Chicken Breasts diced small
  • 1 cup Celery finely chopped
  • ½ cup Carrots shredded
  • ½ cup No-Fat Greek Yogurt
  • ½ cup Light Mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon Dill Pickle minced
  • 1 tablespoon Lemon Juice
  • Salt and Pepper to taste
  • ½ cup Parsley loosely packed chopped


  1. In a large bowl combine the Greek yogurt, light mayonnaise, mustard, mince pickle, lemon juice, salt and pepper. Mix well till everything is combined.
  2. Add the diced chicken breasts, celery and carrots.

  3. Mix thoroughly till all the chicken and the veggies are coated with the dressing.

  4. Mix in the chopped parsley for freshness.
  5. Let it chill in the fridge for 1 to 2 hours for the flavors to develop.
  6. Serve in lettuce cups or over whole wheat slice of bread or slider buns.

Recipe Notes

This makes just over 4 cups of chicken salad. Serving size is 1/2 cup.
