  1. Slice the chicken breasts in half, lengthwise, to get 4 thinly sliced cutlets. Lightly pound the thicker area of the breast, with a meat mallet, to get even thickness for even cooking.
  2. Whisk the eggs in a shallow bowl.
  3. In a separate shallow bowl combine breadcrumbs, parmesan cheese and Italian seasonings. Mix well.
  4. Dip each chicken cutlet into the whisked egg and then dredge it in the breadcrumb mixture. Repeat with the remaining cutlets
  5. Lightly spray the air fryer basket with olive oil spray.
  6. Place the breaded chicken breasts in a single layer and spray the tops very lightly with olive oil spray. Air fry at 350F for 6 minutes.

  7. Flip the cutlets and spread about two tablespoons of marinara sauce on each cutlet. Sprinkle 1 tablespoon of shredded mozzarella cheese on top of the marina ra sauce.

  8. Air fry again at 350F for another 4 minutes.
  9. Repeat with the remining cutlets
