Easy Vegetable Detox Soup

This easy vegetable detox soup is the perfect soup to help add essential nutrients to your body and get that gut moving. It is great for after the holidays too.

Ingredients

  • ½ bunch fresh herbs such as basil,parsley, cilantro, or dill
  • 1 lb green beans fresh
  • 2 stalks celery
  • 3 small zucchini
  • 4 cups vegetable broth

Instructions

  1. Snap the ends off the green beans.
  2. Coarsely chop the celery and zucchini. There is no need to peel the zucchini because the peel has lots of great nutrients and it will be blended.

  3. Add the veggies and herbs to a large stockpot and pour the vegetable broth in.

  4. Bring the soup to a boil and then reduce to a simmer. Cover the stockpot and allow the soup to simmer for 15 minutes or until the vegetables are tender.

  5. Puree the soup in the pot using an immersion blender. If you don't have an immersion blender you can pour the soup into a regular blender in batches. Do not fill the regular blender more than 1/2 way because blending hot soup can be dangerous.

  6. If desired, pour a little heavy cream of add a pat of butter to the bowl of soup for added fat and flavor. Add some fresh herbs to the bowl if desired or some crushed red pepper!
